If we are performing salah, and Riya comes in the heart, then does it
mean we'd have to break the salah and then after correcting the
intention start the salah again? As salah with Riya would be not for Allah
but for others, hence we do shirk, so will it not be acceptable?

If riya enters the heart in any ibaadat, it (the ibaadat) should
not be discontinued. Complete the Salaat, then repent. The repentance
rectifies the niyyat.
