Surah Fatah should be read anyday in he week or on a Friday because it has come in the Hadeeth Shareef that Rasulullah Sallallahu Alayie Wasallam said that Surah Fatah is more beloved to me than all those things upon which the sun has risen (i.e the whole world) SubhanALLAH
