Given the title and topic of the thread and the context of the story that is recorded and posted here..!
The man was not a Dayooth and most muslims especially those living in the UK would come under the category of Dayooth which is way worse then 500 dinars and clearly the man in the story admitted his guilt May ALLAH bestow mercy upon him.

When I read the story, what came to my mind was:

1. That he either somehow made a mistake and misunderstood or forgot he owed the money but that when he realised someone would see his wifes face, he would rather just accept he owes her the money even though he thinks he doesn't (remember we have only been given a small snippet of what took place, not all the details).

2: Or that it was his wife trying to do him over, but when she saw his gahyrah for her, she let him off feeling ashamed.

I did not once think it was him trying to do her over until I read what you wrote.

Is the refusal of the gift and anger in regards to this particular incident due to ghayrah or due to not encouraging gifts being given to him and his family? Is that incident mentioned under a particular chapter?

He used the word "womenfolk" so it seems to be related to "ghayrah."

It was because of Umar RA's ghairah. He didn't like that a non mehram would send gift to his wife.

Chapter heading is "his life with his family".
