The first reason why IS is false is not what they do but their belief. They are wahhabis and salafis. This makes it clear that they cannot be on the right path for now. Their creed is anthropomorphism and wahhabism (teaching of shaykh Ibn Abdil Wahhab) and their fiqh is salafism.
Their. unjust actions we know from the media are only the top of their problems. We could accept them if the only issue with were only unjust actions. But we can never compromise our creed and legal principles.

Please don't be unjust towards the state just because they are salafi or ahl hadith or anthropomorphic wahabis or whatever maslak they belong to, they are Muslims.

Abu Hurairah (radi Allahu anhu) narrated that the Prophet (sal Allahu alaihi wa sallam) said: “Whoever dies without having participated in Jihad or having prepared himself for Jihad, dies on one of the traits of hypocrisy.” [Sahih Muslim]

Imam Nawawi (rahmatullah alaihi) writes in his commentary of this hadith: “And this means that whoever does this, in reality in this attribute he has become like the Munafiqeen (hypocrites) who used to stay behind from participating in Jihad, because to abandon Jihad is one of the traits of hypocrisy.” [Sharih Muslim]

Allama Sindhi (rahmatullah alaihi) writes in his commentary of this hadith: “(and did not prepare himself for Jihad): This means that he did not even say in his heart, ‘I wish I were a Ghazi’. And this means that he did not even make the intention to participate in Jihad. And the sign of having such an intention is that one should have prepared the things that one needs for Jihad because Allah (subhana wa ta’ala) says: ‘And if they had intended to set out they would surely have made some preparation for it.’ [Quran 9:46]” [As-Sindhi ala Sunan An-Nisai]

Even if you spend your whole life on the battlefield, anthropomorphic and deviant beliefs regarding Allah is inexcusable and a great tribulation for the Ummah. As the salaf said honouring or praising any of the people of bidah (beliefs or fiqh) leads to the destruction of the Deen.

Maria and Guest-29536 raised good points. People usually do not understand the issues of states and rulers. The Barelvis and "traditionalists" think that if someone is a wahhabi and unjust he cannot be a ruler or is a illegitimate ruler. But in fact everyone who is a muslim and has control over a part of land is the legitimate (islamically) ruler of it. So we do accept IS as a state and Bagdadi as the ruler of Iraq.

But IS is still false. Wahhabism and salafism can never be accepted. If muslims have the opportunity to destroy the state they should do it. And note that if Bagdadi is indeed an anthropomorphist what is not so easy to check out we will have to make takfir of him and declare him an apostate. Many of the IS judges are proven anthropomorphists and their qadaa is not to be accepted.

There is no way for comparing the mujahidin from the past with IS fighters. First of all most of the mujahidin were not salafis anyway. They might have been influenced by salafism but their aim was not to purify muslims to their salafi ideas. They had nothing to do with the wahhabi takfiri ideology while all IS fighters are takfiris who make takfir based on the teachings of Ibn Abdil Wahhab. Most of the former mujahidin are kuffar according to IS. Bin Laden would be declared an apostate if he was not dead. He always spoke against takfir and barbarism which where found in Somalia and Pakistan among the mujahidin. They just do not make takfir of him because he is that much respected and cannot say anything against them anymore. They made takfir of his successor Zawahiri. IS is completely different in creed and methodology from Al Qaida and the mujahidin of the past.
