Islam wants us to spend a disciplined life as this ummah is the best of all that has certain responsibilities n duties that distinguish it from others but we, due to weakness in our iman, sometimes resist. Allah swt wants us to be 100% submissive to his commands in accordance with sunnah of RasulAllah s.a.w
Our parents also impose certain restrictions on us that we only reap the rewards of when we get older and in all cases as a youngster we do not know why they're placing these restrictions on us yet when we get older we understand and thank them for their guidance because they were telling us only that which is good for us. Similarly Islam is a way of life it isn't just a random religion, and Allah swt knows what is best for us. Allah SW knows us better than we know ourselves therefore, whether we should trust in our nafs n desires or the Creator who's created us and who knows everything about us.
May Allah swt make true Muslims. Ameen

Are these really restrictions or is it that we don't really believe the way we should believe!

On the day of judgement every muslim will come to know the reward of following restrictions of shariah, as you thank your parent's for imposing restrictions in childhood in the same way you will b greatfull to Allah swt on the final day.

Society imposes restrictions on people to stop at traffic lights, drive the car on a certain side of the road, cross the road (when walking) at certain places

Who do they have a problem if the Creator imposes restrictions for the smooth running of humanity?

I would say Islam is freedom from the shackles of worldly desires, lusts, and expectations, otherwise we would be no different than the animals, and free to act and behave in any manner we desire.

Thus, don't we need the laws of Allah to teach us how to be civilized?

Exactly but materialistic ppl are likely to feel suffocation when their desires aren't allowed to violate the rulings of shariah. A large number of such ppl can be seen in our society who're slaves to the worldly comforts for which they, shamelessly, can succumb to taking Riba which's highly abominable act.
