Salaams All

I have this recipe that uses all Halaal ingredients which includes Flour and Yeast.
Once all ingredients are mixed the mixed ingredients is left out for a Day or 2 to ferment and produce what is called a SourDough Mix. This Sour Dough is then used to make Bread, Rolls and all standard bakery products.

After doing alot of research on this recipe I found out that when it is left to ferment it gives of a BY product called HOOCH. This product is actually alcohol. Once it is properly fermented, it is then mixed with a few other halaal ingredients and then shaped into bread and baked in an oven. As far as I know, this bread when consumed does not intoxicate a person at all.

Is this halaal to consume since this BY PRODUCT OF ALCOHOL forms in the recipe?

I did read a little on fermentation and the halaal status of it in islam and many say it is permissible but I need to be sure so this is the best place to get the most acurate answer with regards to this issue.
