We never had a ramadhan food thread this year!

Here's a chicken biryani I made. This was my second attempt at biryani. It turned out nice.

I have the recipe written down if anyone wants it.

ONIONS
Small cup oil
2 tbs ghee
2 medium onions
0.5 ts salt
Caramelise onions till light brown. Drain and rest on kitchen paper

POTATOES
Fry medium chunky potatoes in oil until just undercooked.
Drain and rest on kitchen paper.

EGGS
Hard boil eggs.
Leave to the side.

MARINADE
PART 1
Use previous oils to fry off the following.
Cinnamon sticks.
5 cloves.
5 cardamom
2 black cardamom
2 pinches whole zeera
Fry above off for 30 seconds.
Add chicken and cook just to seal the chicken.

PART 2
0.5 tsp haldi
2 tsp coriander powder
0.5 tsp salt
0.5 tsp garam masala
1 tsp chillie powder
0.5 tsp zeera powder
1 tsp ginger paste
1 tsp garlic paste.
Cook off a little.

PART 3
Take above and add the following.
Fresh coriander.
2 part sliced green chillies.
1 tbs fresh mint.
1 cup yogurt whisked with 2 tbs of milk.

Mix everything well. Cover and leave in fridge overnight or a few hours. Bring to room temperature before using.

RICE
Soak 2 cups of rice for 0.5 hours.
Boil rice with 1 tbs of salt.
Par cook rice - soft on the outside and hard in the middle.
Leave rice to drain.

LAYERING AND COOKING
Slightly warm some oil in the handi.
Add chicken and mix.
Let cook off just a little with lid.
Add 1 cap kewra water.
Layer half of the rice.
Layer half of the onions.
Pour 1 tbs of ghee and 0.5 cap of kewra water on rice.
Repeat with the other half of the rice.
Place potatoes and half sliced eggs on top.

Cover handi with foil and lid.
Use a tawa under the pot.
Cook for 30-45 mins on medium heat.

The recipe is from friend who learnt it from his mother. His mother is from Karachi. Father Gujarati. The end result is very similar to how my aunties make it. So maybe it's Gujarati style so might look different to you. Saying that I had very similar biryani in Karachi cafes.

Yes, I didn't have any saffron. I would never use artificial colouring. The whole dish you see there is 100% organic. Even the spices are organic.

My youngest son made this fully organic chocolate cake. Apart from the chocolate topping the rest of the cake is sugar free. Only sweetener used is organic honey.

What dish is special on Eid at your place.

Here in Deccan India, sheer khorma/doodh khorma.

We use more of milk and less vermicelli/sewayya , and it is very much liquid like juice

I know many other parts of India use more vermicelli and less milk , it looks somewhat thick.

This is how Indian Gujaratis do it. Hot milky drink with raisins, nuts, vermicelli. That's what Gujaratis call kheer. Traditionally drank on Eid morning after Eid salaat.

Eid lunch at my house is home made chicken burgers and fries! Everything is home made including the buns, the chillie sauce, everything. Alhamdulillah everything is organic as well. This is what my kids choose for Eid lunch every year lol.
